Quesadilla Chicken

Quesadilla Chicken
Quesadilla Chicken, Roasted Panko Parmesan Broccoli, and Mac'n Cheese

Years ago, I ordered smoked chicken quesadilla at a restaurant. It had flavorful chicken and smoked bacon, and I thought I can make this! This recipe has evolved over the years. What started as a quest to make really great at home Chicken Quesadillas is now one of favorite ways to add protein to lunches. For this meal prep, I've paired it with Roasted Panko Parmesan Broccoli and Mac 'n Cheese.


1 large packed chicken tenders, cubed
1/2 medium yellow onion, chopped
1 red bell pepper, chopped
Olive oil
2 heaping Tablespoons Rotel
Tasty Taco Seasoning
Salt and Pepper


Chop the onion and bell pepper and set aside.
Chop chicken and place in large skillet.
Add approximately 2 Tablespoons of olive oil and cook on medium heat.
Add salt, pepper, taco seasoning, and cumin. I don't measure my seasonings, just go with your heart.
Let chicken cook for a couple minutes. Then, add onions, bell pepper, and Rotel. Seasoning again with salt, pepper, taco seasoning, and cumin.
Cook until liquid is absorbed and chicken is cooked through.
