This is one of my favorite sides and is a great addition to lunches when meal prepping for the week.

This oven roasted broccoli has quickly become one of favorite recipes. It's great as a side dish, thrown into creamy pasta, and great cold the next day, so it's perfect for meal prep.


3 large bunches of broccoli
1/3 cup olive oil
1/2 cup panko bread crumbs
1/2 cup parmesan cheese
2 teaspoons Italian seasoning
2 teaspoons garlic salt
Salt and pepper, to taste
Red pepper flakes, optional


Preheat oven to 375.
Line a large baking sheet with foil and lightly oil.
Chop the tops off the broccoli, rinse, and place in a large bowl.
Add olive oil and stir.
Mix together bread crumbs, parmesan cheese, and seasonings. Add to broccoli and stir to mix well.
Pour onto the oiled baking sheet.
Bake until broccoli is crispy and the topping is golden brown.


When meal prepping my daughter's school lunches, I like to pair this broccoli with quesadilla chicken and mac 'n cheese.
