This is one of my favorite sides for any Mexican food meal.


1/2 yellow onion, chopped
1 red bell pepper, chopped
1 Tablespoon olive oil
1 can whole kernel corn, drained
1 can black beans, rinsed and drained
Salt & Pepper, to taste
Taco Seasoning


Saute onions and bell pepper in olive oil on medium heat, until they start to brown.
Add corn and black beans.
Season with salt, pepper, cumin, and taco seasoning. I never measure my spices for this one, so follow your heart. Personally,I like it very well seasoned.


The thing that I love most about this hash is it makes a great dip for tortilla chips or Fritos.
