I found this recipe back in 2016. I've changed it over the years to better fit us. That's the beauty of this recipe. It's so easy to adapt and customize to you and your family.

Ingredients

1 Tablespoon olive oil
1 pound beef smoked sausage, sliced into 1/2 inch pieces
1/2 yellow onion, chopped
1 green pepper, seeded and chopped
4 ribs celery, chopped
2 cloves garlic, minced
2 (15.5-ounce) cans red beans (or kidney beans), drained and rinsed
2 cups long grain brown rice
Cajun seasoning, to taste (I like Rajun Cajun)

Instructions

Cook 2 cups of long grain brown rice in a rice cooker or on the stove, according to package instructions.

Add the olive oil to a large skillet over medium heat. Add the sliced sausage and cook for 4 to 5 minutes.

Add the onion, green pepper, and celery. Cook 7 to 8 minutes, or until the onions are translucent. Season with Cajun seasoning

Add the garlic and cook until fragrant, about 1 minute.

Stir in the beans and rice. Season with Cajun seasoning to taste.

Ideas

I like to pre-chop everything earlier in the afternoon. I start the brown rice a couple hours before dinner, so it's ready. When everything is pre-chopped, it comes together in just a few minutes.

The leftovers are perfect for a couple lunches for those who meal prep.
