Years ago I was looking for a new cabbage recipe to make for New Years Day. I found his recipe for Haluski or Noodles & Cabbage. This is Polish comfort food at its best - smoked sausage and buttery noodles surrounded by sweet cabbage. If you love cabbage, you will love this dish.

Ingredients

12 oz beef sausage, sliced
2 Tablespoons olive oi
¼ cup salted butter
Small yellow onion, chopped
½ head cabbage, chopped (approx. 6-7 cups)
1 clove garlic, minced
⅔ cup frozen peas
Salt & Pepper to taste

Instructions

Cook noodles, according to package directions. Drain and set aside.
In a large saucepan, heat 2 Tablespoons olive oil. Add sausage. Cook until lightly browned.
Add onion and butter. Cook until onions soften, about 5 minutes.
Add garlic and cabbage. Salt and pepper. Stir and cover. Stirring occasionally, cook until cabbage is tender (about 10-15 minutes). Stir in peas, noodles, and salt & pepper to taste. Cook 2-3 minutes, continuing to season as needed.

Ideas

When menu planning, I try to prepare this recipe during the same week as Eggroll in a Bowl. Both recipes use 1/2 head of cabbage. I can chop an entire head of cabbage, bag half, and save prep time later in the week.
