Creamy Parmesan and Spinach Penne
your new favorite pasta

What do you do when you forget to buy one ingredient for what you had planned to go with the chicken you are making for dinner? You pivot and throw together some pasta!
Ingredients
2 Tablespoons salted butter
1 Tablespoon olive oil
1/4 cup finely chopped onion
2-3 garlic cloves minced
1/2 bag baby spinach (rough chopped)
Salt and Pepper (to taste)
Nutmeg (optional)
1/2 cup heavy cream
1/2 cup parmesan
8 oz penne pasta
Instructions
Cook pasta in salted water until al dente. Reserving the pasta water.
Melt butter in a large skillet. Add olive oil.
Saute onion. Add garlic and spinach. Salt and pepper.
When spinach has wilted, add heavy cream. Season with salt, pepper, and nutmeg. Bring to a gentle simmer.
Add parmesan cheese. Stir until melted.
Add drained pasta to sauce. Stir.
If needed, adjust the sauce consistency by adding a little of the reserved pasta water.
Top with additional parmesan cheese (optional).
Ideas
This will serve two people with a little leftover, so if you are making for a family of 4, you'll want to double the recipe.
We paired this with pan seared chicken, but this sauce is so light and creamy, I think it would also make a great side to go with Grilled Steak Kabobs.
