When I was a kid, my mom didn't really bake, but she frequently made these. To her they were “oatmeal cookies.” When I started dating Wynn, he told me they were “chocolate oatsies.” To most people, they're simply No Bake Cookies.


4 cups sugar
1 cup evaporated milk
1/2 cup butter
1 cup peanut butter, creamy
3 Tablespoons vanilla
2 ½ to 3 cups quick cooking oats
2 Tablespoons cocoa powder


Combine sugar and cocoa powder in a large, non-stick stock pot. I whisk it together to break up the cocoa powder. Add evaporated milk and butter.

Bring to a boil and let boil for 2 minutes, stirring with a wooden spoon. Remove from heat.

Stir in vanilla. It will bubble quickly as the alcohol cooks off. Stir peanut butter. Blend well. Add oats and stir until combined.

Drop by spoonful onto waxed paper.

When the cookies have cooled and set, store in an airtight container.


You can use a mix of creamy and crunchy peanut butter.

You can also up the cocoa powder to 3 Tablespoons, if you prefer them a little more chocolatey.
