Chicken Fajita Marinade

We've been trying different marinades for grilling chicken for fajitas. This is THE one!

Ingredients

1/4 cup olive oil
1/3 cup lime juice (4-5 limes, freshly squeezed)
1/4 cup water
1 teaspoon sugar
1 1/4 teaspoons kosher salt
1/4 teaspoon ground cumin
2 cloves garlic minced
1 1/2 teaspoons smoked paprika
1 teaspoon onion powder
1-2 Tablespoons chili powder, depending on the heat level of your chili powder.
1/4 teaspoon pepper

Instructions

Freshly squeeze your limes. I love this Lemon Lime Squeezer.

Add all your ingredients to a small bowl and whisk together.

Clean and prep your chicken (breasts or thighs). Place chicken in a gallon ziploc bag. Pour marinade over chicken. Toss to make sure all the chicken is evenly coated. Store in the fridge until ready to grill.

After grilling, slice chicken into thin strips.

Ideas

Use fresh limes.

We like to use chicken thighs for our fajitas. They take me a little longer to clean and prep, but the extra flavor is worth it.

Marinate your chicken for at least 30 minutes. I've let it marinate for up to 6 hours. You don't want to marinate longer than 8 hours due to the amount of fresh lime juice in the recipe.

This is easily doubled for making larger quanities. I doubled the marinade when grilling 4-6 pounds of chicken.
