Cajun Chicken Sloppy Joes

Summer is really starting to heat up, so I am all about easy to eat meals on the balcony or by the pool.
Here is a fun take on sloppy joes.
Ingredients
1 lb chicken, finely diced
1 Tablespoon olive oil
1/2 onion, finely diced
1 red bell pepper, finely diced
2 cloves garlic, minced
1/2 Tablespoon Cajun seasoning
Salt and pepper, to taste
1/4 cup chicken broth
1/4 cup heavy cream
1/4 cup shredded cheddar cheese
1/4 cup shredded mozzarella cheese
4 hamburger buns
Instructions
In a large skillet, saute onion and bell pepper in olive oil. When onions begin to get translucent, add garlic. Saute for another minute.
Add finely chopped chicken to veggies. Season with salt, pepper, and cajun seasoning. Cook until chicken is no longer pink. Drain any excess fat.
Add chicken broth and heavy cream. Reduce heat and stir to combine. Bring to a slight simmer.
Add shredded cheese. Stir to melt cheese and combine until creamy.
Spoon onto hamburger buns.
Ideas
The orginal recipe called for 1 lb. of ground chicken, so if you want to speed up the prep time for this one, that's an easy way to do it.
There's a little cheese in the sloppy joes, but if you're feeling extra cheesy, add a slice of provolone to your sandwich.
